Biography
Dr. Roisin Stack qualified from NUI Galway in 2011. She has trained in Gastroenterology and General Internal Medicine receiving CSCST in 2021.
Following her SPR training, Dr. Stack worked as a locum consultant gastroenterologist in St. Vincent’s University Hospital and has a special interest in inflammatory bowel disease and endoscopy. She has recently completed training in Intestinal Ultrasound in IBD in Milan, Italy and Zagreb, Croatia with the International Bowel Ultrasound Group.
Dr. Stack was appointed as the Pfizer Newman Fellow in Inflammatory Bowel Disease in University College Dublin 2020-2022.

She is currently undertaking a Doctorate of Medicine with University College Dublin titled ‘The Impact of Dietary Supplements on Intestinal Microbial Diversity, Quality of Life, and Well-being in Patients with Inflammatory Bowel Disease’. She has published research in areas such inflammatory bowel disease, capsule endoscopy and 0endoscopy.
Dr. Stack is now working as a Consultant Gastroenterologist at HSE Mid West with a special interest in inflammatory bowel disease.
Dr Stack’s hobbies include travel, reading and music. Her areas of interest are Inflammatory bowel disease, endoscopy, intestinal ultrasound.
